It’s easy to digest, rich in gut-loving nutrients, and naturally calming thanks to gentle ingredients like turmeric and ginger. A nourishing bowl of comfort that’s kind to your belly and full of flavour.
🥕500g sweet potatoes peeled and cut into chunks
🥕300g carrots peeled and cut into chunks
🥕3 tbsp olive oil
🥕2 onions finely chopped
🥕1l chicken stock
🥕Tbsp manuka honey
🥕Pinch sea salt and freshly ground pepper
🥕100ml crème fraîche
plus extra to serve
STEP 1
Add sweet potato, carrots, onion to chicken stock, bring to the boil then allow to simmer until everything is super soft.
STEP 2
Blitz everything until smooth with a hand blender.
STEP 3
Stir in honey, add cracked pepper and sea salt, taste.
STEP 4
Drizzle with olive oil and top with a swirl of crème fraîche and a good grinding of black pepper. I enjoy with fresh sourdough
